Step 1:
Let's start with the test. Add sugar and a pinch of salt to the softened butter. I grind everything well for 1 minute.
Step 2:
Then add the egg (room temperature), baking powder and part of the flour. I leave 50 grams and will add it gradually. It is very important not to score the dough with flour. It is different for everyone, the amount may vary. We need to knead a homogeneous, soft dough that will not stick to your hands.
Step 3:
In the process, I add a little more flour. In the recipe I specified from 160-200 grams. This time it took me 180g.
Step 4:
This is how the dough should turn out. It holds its shape well, homogeneous, elastic and not sticky. I wrap it in a bag and put it in the refrigerator for 10 minutes to rest.
Step 5:
After the refrigerator, I distribute it evenly in the form. The bottom of the form was covered with parchment paper. The size of my form is 19*24. And I send it to a preheated oven to 170 degrees for 10 minutes.
Step 6:
Meanwhile, let's prepare the filling. Coconut layer. I add a pinch of salt and sugar to the eggs and mix everything well. Then I also peel off all the coconut chips there. I mix everything up.
Step 7:
The filling is ready. If, suddenly, it will be too thin (everyone's eggs are different), add a little coconut chips. If on the contrary it is a little dry, add a little milk.
Step 8:
Cut bananas at least 5 mm thick. It tastes better this way:) It is desirable, of course, that they are well ripe. After baking, bananas become creamy. It's very tasty. In the process, I sliced another banana. In total, it took me 3 pcs.
Step 9:
After 10 minutes I take out the half-finished cake. I don't turn off the oven, it will come in handy again soon. And while the cake is still hot, I put bananas on it.
Step 10:
Close to each other. You can help with your hand, slightly tamp it down.
Step 11:
And spread the coconut filling on top. I distribute it well, trying to fill in the gaps between bananas. And I put it in the oven again. 170 degrees until golden brown.
Step 12:
It took me 30 minutes. I'm letting it cool down. You can leave it as a pie, but I prefer portioned pieces. So much more appetizing!!!
Step 13:
Cut and sprinkle with powdered sugar if desired. I have vanilla!!!
