Step-by-step cooking
Step 1:
To prepare the dough, you will need 250 ml.l. of warm kefir.
Step 2:
Add 3 tablespoons of sugar to kefir.
Step 3:
Add 1 tsp of high-speed yeast.
Step 4:
Mix all the ingredients well.
Step 5:
In a separate bowl, break 2 chicken eggs.
Step 6:
Add 1 tsp vanilla sugar.
Step 7:
Add 50 gr. butter.
Step 8:
Mix thoroughly.
Step 9:
Pour our kefir-yeast mass into a bowl with an egg base with butter and mix.
Step 10:
In the resulting liquid base, sift through a sieve 500 gr. flour.
Step 11:
Add a pinch of salt and knead with your hands for 5-6 minutes.
Step 12:
Cover the resulting dough with a towel and put it in a warm place for 50 minutes to lift.
Step 13:
For our recipe, you will need a pear of any variety, but not too hard.
Step 14:
Peel and cut the pear into cubes.
Step 15:
Turn on the stove and heat the frying pan, into which we pour 3 tablespoons of sugar. Warm up the sugar well, to a beautiful caramel color.
Step 16:
Add diced pear, mix and bring to amber color.
Step 17:
For a beautiful color and taste, add sliced persimmons.
Step 18:
Add 30 gr. butter, 1 tsp. vanilla sugar.
Step 19:
Mixing well, we bring our fruit mixture to a thick and beautiful state. Turn off the stove and let our fruit filling cool down.
Step 20:
We spread the finished dough on the table.
Step 21:
Divide the dough into two parts and roll out the tortillas forming up to one centimeter, preferably a round shape.
Step 22:
We put our fruit mixture into the finished tortillas.
Step 23:
Wrap the filling inside so that a roll in the form of a bagel turns out.
Step 24:
We spread it on a baking sheet, form the shape of our bagels, then put it on proofing for 30 minutes with a towel.
Step 25:
Break the egg and beat it well.
Step 26:
We take out our rolls after proofing.
Step 27:
Ready-to-bake rolls-bagels from all sides lubricate with a well-beaten egg with a brush and put our pastries in the oven preheated to 180 degrees for 25 minutes.
Step 28:
We take our pastries out of the oven, grease them with butter and cover them with a napkin. Very soft and fragrant pastries, which are perfect for dessert for tea, are ready! Bon appetit to everyone!
