Step 1:
Dissolve sugar and salt in a glass of warm water. Remove the butter from the refrigerator and let it soften while we prepare the dough base.
Step 2:
Pour the mixture into a bowl, drive an egg into it. Shake it up. Add a tablespoon of vinegar (9%). Stir the mixture.
Step 3:
Pour the sifted flour into this mixture in parts. And knead the dough. We look at the consistency of the dough.
Step 4:
The dough should be elastic and soft, not stick to your hands. If necessary, add a little flour. Roll the dough into a ball.
Step 5:
Divide the softened butter into four equal pieces. The dough is also divided into 4 equal pieces. We roll out each piece of dough on a rolled board into a thin rectangular layer about 3 mm thick. Spread it with butter, evenly distributing it over the dough with a spatula. For each piece of dough, a piece of butter.
Step 6:
On a greased rolling pin, we wind the dough and cut it lengthwise, take out the rolling pin. And we roll the dough across again. Wrap the finished puff pastry with cling film and put it in the refrigerator for a couple of hours.
Step 7:
Prepare the ingredients. The apple puff turns out to be simply incomparable from puff pastry. Preparing such a test at home, of course, requires enough effort and time. And if you don't want to mess with this dough, then you can buy it ready-made in the store, which will greatly simplify the baking process. Or if you have time and desire to prepare puff pastry in advance and freeze in the freezer.
Step 8:
Roll out the puff pastry into a rectangular layer. You can make one large puff from a piece of puff pastry, or several small ones if desired. Apples are better to take sweet varieties, without sourness. If the apples are fresh harvest and their skin is thin and tender, then they do not need to be cleaned, it is enough to remove the core with seeds. Apples are grated, using fresh in baking, without preliminary heat treatment, then more vitamins will be preserved.
Step 9:
Squeeze the juice out of the grated apples slightly, if the apples are very juicy, so that the dough does not become moist. Spread grated apples on one half of the dough, sprinkle with cinnamon and sugar. On the second half, we make transverse incisions along the middle, not reaching the edges of the dough. The second part of the dough is covered with the filling, the edges are carefully pinched.
Step 10:
Beat the chicken egg until smooth and foam appears on the surface. Lubricate the puff with beaten chicken egg. The oven is heated to 180 degrees. Bake the puff for about 15 minutes. When the puff turns brown, we take it out of the oven and serve it to the table. Such pastries are delicious with tea, coffee and cocoa. It is not very high in calories thanks to cinnamon and apples, so even those who watch their figure can afford it. Bon appetit!
