Turn on the oven to warm up to 190 degrees Celsius. While it is warming up, we begin to prepare the sauce.
Pour a small amount of olive oil into the pan, lubricate it well from the inside (both the bottom and the sides). Cut the crust from the brie cheese, then cut the cheese into large pieces and place half in a frying pan.
Peel the garlic cloves from the husk, finely chop them with a knife. After that, we transfer the crushed garlic into a small bowl. In general, you can use more garlic - up to two heads, but in this matter it is worth focusing on your taste. With a lot of garlic, the sauce will be much richer and sharper.
Cut the pre-washed and dried rosemary, cut it finely. Put the chopped herbs to the garlic. Pour the mixture with olive oil, mix everything well and let the mixture stand for 5-10 minutes.
Then spread the rosemary-garlic mixture over the cheese, sprinkle everything with salt and ground black pepper. We put the frying pan in the oven that has had time to warm up for 5 minutes. During this time, the cheese should begin to melt in the oven. Remove the pan from the oven and spread the remaining cheese on top. This simple technique will help you get the best result.
Put the pan with the future sauce in the oven again for 5 minutes. The cheese should completely melt and start bubbling.
Remove the pan from the oven, taste the sauce and, if necessary, add a little more salt. Sprinkle the sauce with dried thyme on top and serve to the table. There is no need to delay - we do it right away!
