Rabbit and noodle soup for kids

A light, wholesome, and very tasty little soup for our beloved kids! When I finally managed to get my hands on a rabbit, I decided to treat the children to this soup — it's easy to make and loaded with their favorite noodles, which mine absolutely adore! My kids gave it their full approval, and it was a joy to see their empty bowls. It came out really delicious!

Cooking method

    Cut up the rabbit.

    The meaty pieces will go into another recipe, and the back section can be used for the broth.

    I used this part of the rabbit because it has a lot of bones, but you can choose whichever part you prefer.

    Cover with water and cook the broth over very low heat, so the water barely simmers — that keeps the broth clear. Don't forget to skim off the foam as it appears.

    After 20 minutes, add a carrot, an onion, and the bay leaf to the broth.

    Cook for another hour.

    Prepare all the rest of the soup ingredients: potatoes, onion, carrot, bell pepper, sun-dried tomatoes, vermicelli, and herbs.

    After an hour, take out the rabbit meat along with the onion and carrot, and set them aside to cool.

    Dice the potatoes.

    Drop them into the boiling broth.

    Finely chop the onion.

    Cut the carrot into thin matchsticks.

    Dice the bell pepper small.

    Add them to a preheated skillet with a little olive oil and sauté briefly.

    Finely chop the sun-dried tomatoes and add them to the skillet.

    Separate the rabbit meat from the bones and return it to the broth.

    Finely chop the herbs, setting some aside for garnish.

    When the potatoes are tender (it took me 20 minutes), add the sautéed vegetables to the soup, bring it to a boil, add the vermicelli, cook for 5 minutes, then stir in the herbs and turn off the heat. Let it rest for 10 minutes.

    Ladle the soup into bowls, sprinkle with fresh herbs, and call the kids to the table!
