Cooking method
Pour flour into a bowl, add salt, sugar and dry yeast. Then we break the egg, pour in kefir and vegetable oil. Knead a fluffy, soft dough. And while the dough is "resting", let's do the filling.
Peel potatoes and onions, wash the meat. Now all the components need to be crushed. In order not to complicate life, we pass everything through a meat grinder using a nozzle with large cells, add salt and voila - the filling is ready!
Divide the dough into small balls, roll them into tortillas, put the filling in the center. We pinch the edges, forming a triangle (we don't pinch until the end, we need a hole). We spread the products on a baking sheet lined with parchment.
Lubricate the echpochmaki with beaten egg and send it to the oven, preheating it to 200 degrees. After about 20 minutes, we take out a baking sheet and pour in the broth (about 1 tbsp.spoon) into the hole of each echpochmak. Return the baking sheet to the oven for another half hour.
That's what a beautiful pastry turned out - pleasing to the eye and not only :)
