Chicken with soba noodles

A vibrant, lightly spiced, light dish of buckwheat noodles! Soba — that's the name for buckwheat noodles — is a wholesome, diet-friendly food. It has fewer calories than ordinary noodles and is rich in vitamins and minerals. Most of all, though, it's delicious, especially with vegetables and chicken.

    How do you make chicken with soba noodles? Gather your ingredients. If the beans are frozen, leave them as is, without thawing. For spices, I used red and black pepper.

    Wash the chicken breast, pat it dry with a towel, and cut it first into strips, then into small pieces.

    Wash the vegetables and cut them into roughly equal pieces: the onion into half rings, the carrot and pepper into batons.

    Heat a skillet, pour in the vegetable oil, and add the chopped chicken. Fry until it's fully changed color, stirring constantly with a spatula. Lower the heat and let the chicken cook for 5 minutes.

    Add the cut vegetables and the beans to the chicken and stir. You can turn the heat back up. Stir-fry, stirring constantly. Season, add the soy sauce, and just a little salt — the sauce is salty, so taste before adding any.

    Cover the skillet and let the chicken and vegetables simmer over low heat for 10 minutes.

    Meanwhile, cook the noodles. Take a large pot, bring the water to a boil, salt it lightly, and add the soba without breaking it. Cook for about 8 minutes. Then drain the noodles in a colander and rinse them with cold water so they don't stick together.

    Add the cooked noodles to the chicken and mix well. Cover and let it sit over low heat for 3 minutes so the noodles warm through and soak up the flavors. Enjoy!

  • If you've ever had soba, you know it has a fairly neutral taste, and it's the vegetables that bring out its best. We love this dish and I make it often. In season I use fresh vegetables; in winter I use frozen. You can make these noodles with no chicken at all, just vegetables, or use mushrooms in place of meat. The meat can be anything, by the way — pork or beef. If you like it spicy, add grated ginger, garlic, or hot pepper to the vegetables. These noodles are always made to eat at once; they don't keep, so bear that in mind.
