The basis of good shanks is not only a delicious filling, but also a properly prepared dough. For this recipe, we will need to mix the sifted flour with yeast, egg, sugar and warmed kefir. Mix into one mass and leave to rise, according to all the rules – in the heat, covering the container with the dough with a towel.
The filling is easier to make. Cook the potatoes and turn them into mashed potatoes, mixing with pieces of fried onions. We add salt to them, and some seasonings, whatever we want. We mix it finally and prepare to use the filling for its intended purpose.
We make exactly ten balls from the risen dough. Roll out the balls into pancakes. In the middle we spread mashed potatoes with onions. We put the stitches on baking paper, greased with oil, and leave it for fifteen minutes. Smear the treats with sour cream on top and bake for 20 minutes at a temperature of about 150 degrees. We take it as a goal to check whether the shanks are ready.
