Honey Piparkukas

Nowadays, there are a huge number of culinary recipes for making cookies for Christmas – piparkukas – soft and hard, thin and similar to gingerbread, honey, nut, sour cream, chocolate and more. Latvian cuisine gives this dish a unique taste thanks to the addition of various spices. I want to introduce you to get acquainted with one of the recipes for cooking this festive dish. Instead of all spices, you can take 2 tsp. of the finished mixture for Piparkukas

Cooking method

Cooking time: 1 h 30 min

Put sugar, butter, honey in a saucepan and heat it on the stove. Add all the seasonings and a little flour (pre-sift) Beat the dough with a mixer until smooth. It should still be hot.
Now cool the dough slightly and drive one yolk into it. Add the flour mixed with baking powder, knead well until smooth.
Wrap the dough in foil and put it in the refrigerator for 2 days. Then take it out, roll it out on the table, cut out the figures and immediately bake in a preheated 200C oven for about 15 minutes (plus or minus).
After baking, the cookies  Piparkukas should lie down for 2 weeks in a closed cookie box.
You can also decorate these cookies with icing. For the glaze, take protein, 1.5 tbsp. powdered sugar, 2 drops of lemon juice. All this is simply whipped together and applied to the cookies.
