Estonian recipes never really caught on widely elsewhere, probably because of the tricky dish names: mulgikapsad, kama, sült, pirukad, piparkook, sõir... it's easy to get confused at first. And that's a real shame for practical home cooks, because those exotic names hide a set of quite traditional, all-season, inexpensive ingredients: potatoes, cabbage, beets and other "garden" vegetables, fish and meat, dairy products, grains and legumes, and a minimal set of familiar spices. The whole secret is in the unusual combinations.
How do you learn to cook the way Tallinn restaurants do? You have to mix things up and not be afraid to experiment: simmer soups with beer, make porridges and desserts from vegetables, pair dairy with herring. In general, milk, sour cream, cream, and curdled milk are everyday staples of the local cuisine. They are used to make a variety of sauces and gravies, and food is fried in them instead of vegetable oil.
