I found a culinary recipe for a German cottage cheese pie in a fashion magazine. In Germany, such pies are served daily with tea, but I believe that such food can be a decoration of the festive table. We take 3 chicken eggs. We separate the whites from the yolks. Sift wheat flour and add chopped butter (200 gr.), 50 ml of cream, 3 egg yolks and 100 gr. granulated sugar. Very quickly knead the dough, cover it with cling film and send it to the refrigerator for half an hour. At this time, we knead the cottage cheese, add to it 100 grams of sugar, the remaining amount of cream, 3 chicken eggs, 50 grams. butter, potato starch and vanilla. All components are mixed with a blender. Dried cherries and dried apricots are thoroughly washed, then pour boiling water for 5 minutes. Drain the water and dry it. Chop dried apricots and almonds, and then send them to the curd mass. Then add brandy and cherries to this mixture. Mix well all the components of the curd mass. We roll out the cooled dough and put it in a high baking dish. The sides also need to be covered with dough. We spread the curd filling on the dough and send the mold to the oven, preheated to 180 degrees. Bake the pie for 40 minutes. Beat the egg whites with the remaining sugar into a strong foam and spread them on the surface of the pie. Bake for about 20 more minutes. Turn off the oven and leave the pie in it for a slow cooling. The finished German cottage cheese pie is cut into segments and served on the table. Have a nice tea party!
