Halva shekinskaya

Very sweet and incredibly delicious halva! I want to share with you a culinary recipe for a very tasty dessert that I have loved since childhood. This delicacy, along with other national food, was prepared in our family for the holiday "Navruz" Of course, a real masterpiece of Azerbaijani cuisine - Sheki halva can be tasted only in my homeland. But if you try very hard, then this sweetness can be prepared at home.

So, we need rice flour, from which we knead the batter, gradually adding 120 ml of water to it. Then, using a special funnel with holes, we pour the dough onto a hot baking sheet and bake a kind of mesh-like guinea worm.
We make the filling for the dough like this. Chop the nuts and add coriander seeds and crushed cardamom. Then we put 8 layers of rice guinea worm in a greased baking sheet. We apply a layer of filling evenly on these layers, place 5 more layers of guinea worm on top and give the halva a round shape. The whole structure is decorated with saffron on top. Then bake for 15-20 minutes over hot coals on both sides. After that, we prepare the syrup. In 100 ml of water, add sugar and citric acid. Fill the halva with hot syrup and leave it for 8-10 hours so that it is thoroughly soaked with it.
When serving Sheki halva on the table, you can pour honey. It turns out very tasty!
