Cooking method
Gherkin chickens are named after the example of small vegetables and have a weight of only 350-500 grams. They are a great option for a romantic dinner or a festive table, and children also really like them.
Prepare the vegetables:
- cut the celery into medium pieces;
- cut carrots into circles;
- chop the onion.
Now proceed to the preparation of the baking pillow:
- send all the vegetables together to a frying pan heated with vegetable oil and lightly simmer over medium heat, stirring;
- crumble the dried mushrooms directly into the frying pan and, continuing to stir, fry for another 5-7 minutes;
- put the mixture in a baking dish and spread evenly.
Turn on the oven to warm up to 220 degrees and prepare the chickens:
- wash and dry;
- season with salt and pepper inside and out;
- put a bay leaf and a sprig of thyme inside the chicken, fix its legs;
- put the chickens on the prepared vegetable pillow, pour the broth, put the remaining thyme and sage.
The baking process is extremely simple:
- the first baking session is 15 minutes, after which you need to get a mold and pour the carcasses with broth (in which they are baked);
- the second one is 30 minutes, after which it is necessary to remove the mold from the oven, pour 150 ml of broth from it into a saucepan, add honey and balsamic vinegar, bring to a boil and boil for 5 minutes, and lubricate the chickens with the resulting glaze;
- the third and final stage is also 30 minutes - after that, remove the chickens from the oven and transfer them together with the vegetables to a dish.
Serve the gherkin chickens hot, garnished with herbs if desired.
