Step 1:
Pour out half of the milk, put the remaining half of the milk to heat up, add butter there so that it completely melts. Remove from heat, add sugar and salt, let it dissolve completely. Add cold milk.

Step 3:
Knead the dough and leave it for a few hours, covered with a film or towel. Well, or, as the author advises, after kneading, put the dough in the refrigerator overnight (as I did), and in the morning take it out and leave it at room temperature for 2 hours.

Knead the dough that has come up, divide it into equal pieces (8-10 pcs.). Form the bagels properly by connecting the ends.

Bring the water to a boil, gently pour in the soda and reduce the heat. Carefully, one by one, we put them in a saucepan for 30-40 seconds, they should increase in volume, during this time you can turn them over a couple of times.
Step 6:
Remove from the pan, let the water drain, cover the baking sheet and stack the bagels. Sprinkle with sesame seeds or poppy seeds, you can just use coarse salt. There is no need to lubricate anything.
Step 7:
Bake at 180 degrees for 30 minutes, if you make small buns, then 20 minutes, until golden brown.
