Step-by-step cooking
Step 1:
To start, mix almond flour with powdered sugar. The flour should be dry.
Step 2:
Then we take the aged proteins (stood in the refrigerator for 3 days) at room temperature and whisk to soft peaks, then gradually add sugar and whisk to hard peaks (I whipped for 10 minutes), add cocoa powder.
Step 3:
Sift the flour mixture through a sieve into the whipped whites.
Step 4:
Gently mix the flour mixture with the whipped protein with a spatula.
Step 5:
Using a pastry bag, we plant cookies with a diameter of 2-3 cm and hit the baking sheet several times on the table so that extra bubbles come out. Let stand at room temperature for an hour.
Step 6:
While the cookies are infused, we prepare the cream in a water bath. Mix the chocolate with cream until thickened and put it in the refrigerator.
Step 7:
In the preheated oven to 150 degrees Celsius, bake for 15 minutes.
Step 8:
