First we make a biscuit. To do this, whisk the proteins with cold water and sugar into a foam. Add the yolks, beat everything with a mixer at low speed. Pour in the sifted flour, baking powder, vanilla, starch. Mix everything until smooth.

Preheat the oven to two hundred degrees.

Put parchment on a baking sheet. Spread the dough, bake for 10-13 minutes.

On the wet kuh.we pour a little sugar on the towel. We turn the sponge cake onto it. Carefully remove the parchment, moistening it with water. Roll up the roll without exerting effort. We fix the thread in two places and cool it at room temp.

Cooking cream with drunk cherries. Rub the yolks with sugar with a whisk. Boil the cream with a stick of vanilla. Then we remove it, and pour the cream into the yolks, continuing to stir.

Pour the cream and eggs into a saucepan and heat over low heat. We do not bring it to a boil, we interfere all the time. We remove it from the stove, cover it with a film and put it in the refrigerator.

Dried cherries are washed, poured with rum or cognac. Leave for a day, stir from time to time. Then drain the liquid, and dry the cherries.

Untwist the roll, leave the inner edge slightly bent. We smear the cream on the surface, put drunk cherries on top. We leave part of the cream for decoration.

Roll up the roll, put it on the dish seam down. We put it in the refrigerator for 20m.

The cream is cooled. After applying it to the roll. Sprinkle with pistachios. And we put it in the refrigerator for the night.
