Salad with Smoked Chicken Breast, Corn, and Egg
Fresh, simple, light, and very tasty — no mayonnaise! In this salad with smoked chicken breast, corn, and egg, all the ingredients complement each other beautifully. Make it right before serving, since it isn't meant for long storage. Simple and quick — ready in 20 minutes!

Step 1:
How do you make a salad with smoked chicken breast, corn, and egg? Gather the ingredients you'll need. Boil the eggs ahead of time in boiling water for 7–8 minutes — that's enough to cook them through. Drain off the hot water, cover them with cold water, and leave them to cool. For the dressing we'll use sour cream with mustard, but if you like you can swap that for mayonnaise or use just sour cream.

Step 2:
Cut the smoked chicken breast into small cubes. Peel the boiled eggs.

You can make the salad straight in a bowl, mixing all the ingredients together, or build it in layers. I do mine in layers. Set a serving ring on a plate and add the cubed chicken as the first layer. Press it down a little so the layer is more compact. For the dressing, mix the sour cream with the mustard. Spread this dressing over this layer and every layer after it.

Cut the cucumber into small cubes, too. Add the cubed cucumber as the next layer over the chicken.

Grate the boiled eggs on the coarse side of a grater and transfer them into the ring, forming the next layer of the salad.

The last layer is the canned corn. Drain all the liquid from the can and spread the corn over the top of the salad. Carefully lift off the serving ring. Before serving, chill the salad briefly in the refrigerator. Serve the finished salad garnished with fresh herbs. Enjoy!
- How do you buy canned corn the right way? Always check the expiration date on the can. If it's a glass jar, look the kernels over closely. They should be uniform in size and color, whole, and free of spots. The ingredient list shouldn't include dyes, preservatives, or flavor enhancers.
- Always wash eggs before using them, since even a seemingly clean shell can carry harmful bacteria. It's best to use a food-safe wash and a brush.
- Only make salads from fully chilled ingredients. A salad made from warm ones can spoil quickly.
