Fava Bean Soup
Hearty, tasty, and nourishing, this soup is a treat for anyone who loves legumes. In our family we're big fans of pea and white-bean soups, and this fava bean version won us over too! Fava beans have a more delicate flavor and aroma. They're rich in protein, so the soup turns out every bit as filling as one made with meat. This warming bowl is perfect for Lent and other fasting days, and vegetarians will love it just as much. It's an especially good choice in winter, when a bean-and-vegetable soup packed with vitamins is exactly what you need.

Step 1:
Start by rinsing the fava beans well and soaking them in cold water, using about 3 parts water to 1 part beans. I soaked mine overnight, and they swelled to roughly 2.5 times their original size.

Step 2:
Here are the ingredients for the soup. The root vegetables, onion, and potatoes are peeled, and everything—including the herbs—has been washed.

Some cooks simmer beans in the same water they soaked in. I prefer to drain it, rinse the beans, and cover them with fresh water so it just barely covers them. Bring it to a boil, then drain again. Add a fresh measure of water, cover, and simmer (no salt yet) until tender. Cooked this way, the beans are much gentler on your stomach. Mine were done in under an hour.

Step 4:
While the beans cook, dice the carrot and parsley root into small cubes and finely chop the onion.

Sauté the chopped vegetables in vegetable oil over medium heat for about 10 minutes.

Cut the potatoes into large cubes.

Add the sautéed onion, carrot, and parsley root to the pot with the beans. Bring to a boil and cook over medium heat for 10–15 minutes.

Add the potatoes and spices and cook for 20 minutes, then season with salt. Check that the potatoes are tender and bring the soup back to a boil.

Step 9:
Chop your favorite fresh herbs—I used a mix of parsley and dill.

Ladle the hot soup into bowls, add a dollop of sour cream, sprinkle with the herbs, and enjoy. Give it a try—this soup is delicious!
