- We cook the first broth from the small fish for about 35 minutes to get a good, rich stock. Take the small fish, wash and clean them. Put all the little ones in a pot (or a cauldron, if you're cooking outdoors), along with the trimmings from the larger fish—tails, fins, heads, and bones. Cover with cold water, add salt, and bring to a boil. Skim off the foam as it appears and lower the heat. Keep it at a gentle simmer for half an hour. Now make the second broth: strain it and discard the small fish. Add your pre-cut, larger fish to the broth along with the parsley root and a peeled onion. Raise the heat slightly and cook until the fish is done. For the third broth, lift the fish out, bring the broth back to a boil, and add the chopped carrots (or potatoes). After about 10 minutes, add the large fish cut into big chunks. Add black peppercorns and bay leaf. If your broth is cloudy, use the tip below at this point. Now pour the vodka into the soup and add chopped green onion, parsley, and dill. Cover the pot and turn off the heat. Let it rest for about 15 minutes. Your triple royal ukha is ready. Tip: if the broth is cloudy, do this—whisk a raw egg white with a little salted water and stir it into the slightly cooled broth. Bring to a boil and hold at a low simmer for another 15 minutes.
