Step-by-step cooking
Step 1:
First of all, we cook potatoes - wash them, clean them
Step 2:
Boil in salted water until ready
Step 3:
Turn the potatoes into mashed potatoes, drain the potato broth and let it cool down a little
Step 4:
Prepare the ingredients for the dough. If the broth turned out to be less - add some water. If you have a different filling, replace the broth with warm water or milk with water (50:50)
Step 5:
Dissolve sugar and salt in warm potato broth
Step 6:
Mix dry yeast with flour. I almost always cook from dry yeast - it saves a lot of cooking time.
Step 7:
Combine the dry and liquid components and knead the dough, knead well for 10-15 minutes, at this stage I often resort to the services of a bread maker
Step 8:
Our dough turns out smooth and elastic, it's nice to work with it
Step 9:
Cover and leave in a warm place for 1 hour
Step 10:
In the meantime, we are preparing the filling, for it we will need: mashed potatoes and pre-boiled meat through a meat grinder, an onion. I have pork with beef, but any meat, chicken or liver will do here - take any, it will be delicious)
Step 11:
Finely chop the onion
Step 12:
Fry in vegetable oil until golden brown
Step 13:
Add the meat to the onion through a meat grinder, salt and pepper, fry for another 5 minutes
Step 14:
Add the fried meat to the mashed potatoes
Step 15:
Mix with a pusher
Step 16:
Our filling is ready!
Step 17:
After the specified time, the dough has already risen
Step 18:
Divide it into small balls, about the size of a chicken egg. From these ingredients I got 25 pies
Step 19:
We form tortillas with our hands

Lay out the filling

We fasten the edges well and make pies, lay them seam down
Step 22:
Leave it under a towel for 10-15 minutes to rise, but you can also start frying the first molded pies, because they have already risen a little

Fry in preheated vegetable oil. It should reach about the middle of the pie, be very hot, but in no case burn. I fry in an old cast-iron frying pan - it has a higher heating temperature. The pies are growing right before our eyes, it can be seen on the video

Turn over and fry on the other side
