Step-by-step cooking

Cooking time: 1 h 20 min
  1. Step 1:

    Step 1.

How to make chak-chak with vodka? Prepare the necessary ingredients for this. Vodka is necessary to make the dough more friable. During the cooking process, all the alcohol will evaporate.

  2. Step 2:

    Step 2.

To prepare the dough, combine the eggs with sugar and salt. Beat them a little with a whisk until smooth.

  3. Step 3:

    Step 3.

    Then stir in the vodka.

  4. Step 4:

    Step 4.

For kneading dough, it is convenient to use a wide bowl or do everything on the table. Sift the required amount of flour of the first grade through a sieve and pour 2/3 of the total amount into the bowl, making a recess in it. Then add the egg mixture to the flour. Do not add all the flour at once. It may need a little more or less than indicated. Focus on the consistency of the finished dough.

  5. Step 5:

    Step 5.

Start mixing the ingredients. At first, it is convenient to use a wooden spatula, and then knead the dough with your hands. If necessary, add the rest of the flour. Mix the dough very thoroughly for 7-10 minutes.

  6. Step 6:

    Step 6.

The finished dough will be quite steep, but elastic and not sticky to the hands. Wrap the dough in plastic wrap and leave it on the table for 20 minutes.

  7. Step 7:

    Step 7.

The rested dough does not shrink when rolling out and it is easier to work with it. Roll out the dough on a table lightly floured with a thin layer of 2-3 mm, and then cut it into thin strips 2-3 cm long and 2-3 mm wide.

  8. Step 8:

    Step 8.

Mix the sliced strips and leave them to lie on the table for 5 minutes so that they are slightly chapped.

  9. Step 9:

    Step 9.

For frying, you can use dishes with a thick bottom, a cauldron or a saucepan. Preheat the vegetable oil to a very hot state. Fry the chopped dough in 3-4 sets, until golden brown. Then remove it with a slotted spoon into a colander to allow excess oil to drain. The hotter the oil is, the less it will be absorbed into the dough during frying. This means that the dessert will not be very greasy.

  10. Step 10:

    Step 10.

For filling, combine honey and sugar. Put on the fire and bring to a boil. Boil everything together for 1-2 minutes.

  11. Step 11:

    Step 11.

Transfer the fried dough to a spacious bowl and pour the hot honey mixture. Gently, trying not to break the pieces, mix it with a spatula.

  12. Step 12:

    Step 12.

Put the warm mass on a flat dish and form a slide with wet hands. Press your hands tighter to get, as it were, a small cake. Put the delicacy in the refrigerator for 2 hours so that the syrup freezes.

  13. Step 13:

    Step 13.

Cut the finished chak-chak into pieces and help yourself. Have a nice tea!

If you are confused by the presence of vodka in the dough, then you can replace it with 1 tablespoon of baking powder.

To make sure that the oil has warmed up, dip a wooden spatula into it. If bubbles have gathered around it, then you can start frying.

How do I know if an egg is fresh? Break it into a separate container. First of all, there should be no unpleasant smell. The protein of fresh eggs will be transparent and clean. The yolk should not spread and will be shiny, convex, homogeneous.

Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
