Potato dumplings are a traditional food in Eastern European countries. Moreover, dumplings are cooked and boiled and fried. I offer a culinary recipe for fried dumplings, although their caloric content is higher, and they are more harmful to the liver. But you need to know and be able to do everything.
Cook potatoes right in the peel until fully cooked. We dip it in cold water and quickly clean it. Slightly cooled potatoes are kneaded with a pusher and gradually release the yolks into it. To the resulting mass, add ground almonds, nutmeg, pepper and salt. pour a little flour and knead the dough. On a cutting board, lightly sprinkled with flour, roll out the dough and roll it into a tube with a diameter of about five centimeters. Cut into small pieces and roll them into balls.
Heat the fryer in the pot until the smoke starts. We dip the dumplings in lightly beaten protein and roll them in almond crumbs. Deep fry for five minutes, until a uniform golden crust is formed. We throw several pieces into the fryer, because if you throw a lot at once, the temperature of the fryer will drop and the desired effect will not work. We take out the dumplings with a slotted spoon and put them on paper towels to collect excess fat.
Served with sour cream and herbs.
