Salad with Beans and Chicken Liver

A tasty, hearty, quick salad with chicken liver. You can use any liver here—it won't change the taste much. The key is not to overcook the liver, so it stays soft while still being done. Instead of cutting the liver into pieces, you can grate it on a medium grater for an even more tender salad.
