- Warm the milk until it's just lukewarm, then stir in the sugar and salt and pour in the vegetable oil.
- Sift the flour into the mixture and add the yeast.
- Knead the dough slowly, for about 15 minutes. To keep it soft and airy, don't add too much flour; to make it easier to knead and keep it from sticking to your hands, you can rub it with a little vegetable oil.
- Cover the dough with plastic wrap and let it rise for an hour. Meanwhile, prepare the filling.
- Boil the rice in salted water until fully cooked.
- Hard-boil the eggs, then cool, peel, and dice them.
- Combine the eggs and rice, stir in a pat of butter, season with salt, and mix.
- Finely chop the fresh herbs and add them to the filling.
- Divide the dough into small, equal-size balls. Roll each ball into a round, place filling in the center, and pinch the edges closed.
- Arrange the pies on a parchment-lined baking sheet, brush with egg yolk, and sprinkle with sesame seeds.
- Bake the pies in an oven preheated to 400°F (200°C) for 20 minutes.
