Fluffy Baked Hand Pies (No Kefir)

    1. Warm the milk until it's just lukewarm, then stir in the sugar and salt and pour in the vegetable oil.
    1. Sift the flour into the mixture and add the yeast.
    1. Knead the dough slowly, for about 15 minutes. To keep it soft and airy, don't add too much flour; to make it easier to knead and keep it from sticking to your hands, you can rub it with a little vegetable oil.
    1. Cover the dough with plastic wrap and let it rise for an hour. Meanwhile, prepare the filling.
    1. Boil the rice in salted water until fully cooked.
    1. Hard-boil the eggs, then cool, peel, and dice them.
    1. Combine the eggs and rice, stir in a pat of butter, season with salt, and mix.
    1. Finely chop the fresh herbs and add them to the filling.
    1. Divide the dough into small, equal-size balls. Roll each ball into a round, place filling in the center, and pinch the edges closed.
    1. Arrange the pies on a parchment-lined baking sheet, brush with egg yolk, and sprinkle with sesame seeds.
    1. Bake the pies in an oven preheated to 400°F (200°C) for 20 minutes.
