Smoked Chicken and Crouton Salad
A simple, tasty, filling salad that's just as good for a party as for a quick lunch! With smoked chicken and crunchy croutons, this salad is hearty and satisfying. Beyond those two staples, you can toss in just about anything you have on hand — smoked chicken and croutons pair well with all kinds of vegetables. In summer, add fresh cucumbers; in winter, pickled ones work great. Dress it with mayonnaise, or go lighter and healthier with olive oil.

Step 1:
How do you make a smoked chicken and crouton salad? It comes together fast. Use boneless ready-made smoked chicken — just make sure it's fresh and tasty. All you have to do is cut the meat into small cubes.

Hard-boil the eggs in salted water. Then run them under cold water — they'll peel more easily and cool faster. Peel and finely chop them with a knife.

Peel the onion and carrot. Finely chop the onion and grate the carrot. Heat the vegetable oil in a skillet — don't use much, since the salad will be dressed with mayonnaise and too much oil would throw off the flavor. Sauté the onion and carrot until the onion is translucent and the carrot is soft. Don't let them brown, or they'll turn bitter and spoil the salad. Let the sautéed vegetables cool.

Step 4:
Boil the potatoes in their skins — or, even better, roast them in the oven with a little olive oil for more flavor. Let them cool, then peel and cut into small cubes.

Wash and finely chop the fresh cucumber. In winter you can swap in pickled cucumbers — they'll only add a nice tangy kick.

Rinse a few green onion stalks well and chop them finely, on the diagonal if you like — it looks prettier that way.

Combine all the prepared ingredients in a large bowl. Season with salt and dress with mayonnaise. This salad is best served in individual bowls, sprinkled with croutons and garnished with a sprig of parsley — or set out a bowl of croutons on the side so each guest can add as many as they like.
