There are different ways of harvesting greens for the winter: greens are dried, frozen, salting, canning. The best ways in which the maximum of vitamins is preserved are considered to be freezing and drying. In addition, these are the simplest ways that do not require extra effort and time. When drying celery, essential oils, acids and trace elements are preserved in it. Initially, the celery is thoroughly washed, dried, we separate the leaves from the petioles, put the greens on a clean sheet of paper, cover the top with another one and leave it in a well-ventilated room, periodically you need to check the condition of the greens, turn it over. You can dry celery in bundles by hanging them on strings in a ventilated room on the wall.
Freezing. With this method of harvesting greens, some of the nutrients still disappear. However, many housewives like frozen greens, it is convenient to use it when cooking dishes. The greens are thoroughly washed, dried, the leaves are separated from the stems and put in a container or bag, tying it so that an air space is formed in it. We send the greens to the freezer for a couple of hours, then take them out and transfer the frozen ones to compact storage containers in the freezer. Also, the leaves can be placed in ice molds, pour them with clean water and freeze them, and then use them for cosmetic purposes, for example, to wipe the face.
With dry salting, the washed greens are finely chopped and mixed with table salt, tightly packed in glass jars. Such a blank is stored in the refrigerator. It turns out very salty, it can be added to dishes instead of salt, it turns out not only a salty dish, but also spicy, fragrant.
