Cooking method
First, carp caviar must be salted for 2-3 days. It is not recommended to beat it raw. For salting, choose a deep container. Mix caviar and salt in it. Cover with clingfilm and salt in a cold place.
After 2-3 days, you can proceed to the second stage - whipping with a mixer. First, it is necessary to beat for about 10-15 minutes at the highest speed - the caviar will begin to turn white and its volume will increase by one and a half times.
Then, for 10-15 minutes, without stopping beating the caviar, gradually pour in vinegar, sunflower oil and add finely chopped green onions.
Put the beaten caviar in the refrigerator for 2-4 hours.
