Step 1:
We cut the fish into fillets with skin, with a sharp knife. We remove the rib part with a knife and the remaining bones with tweezers.
Step 2:
Squeeze the orange juice. Fill them with fish. Sprinkle with sugar. Under the fillet, pour part of the salt, sprinkle the rest on top and rub the entire surface of the fish. We put dill on trout. We wrap it with cling film and put it in the refrigerator for 20 hours.
Step 3:
