Beat butter at room temperature with sugar and yolks. Rub the cottage cheese (you can pass it through a meat grinder), add the oil mixture, lemon zest, soaked raisins and candied fruits in advance. Mix thoroughly, add sour cream.
Line the mold for Easter curd with slightly moistened gauze so that the edges hang down, carefully lay out the mass, lightly ramming. Wrap the edges, press lightly, put in a plate (it turns out that upside down), a load on top (I usually put a 0.5 liter jar of water) and in the refrigerator for at least a day. If the plate is not very deep, then monitor the released liquid in order to drain it in time.
