Step 1:
How to fry crumpets on kefir in a frying pan? Prepare the ingredients. The dough according to this recipe for crumpets is a great way to attach the remnants of yesterday's kefir, which you do not want to eat in the usual form. On sour kefir, crumpets turn out even more lush and airy! The only condition is to take kefir at least 3% fat content. Wash the raw egg and dry it with a napkin.
Step 2:
Put sugar, salt, vanillin on the tip of a knife in a deep bowl (read the instructions on the package, vanillin and vanilla sugar differ in dosage and methods of adding to the dish) and beat in a raw chicken egg.
Step 3:
Whisk the ingredients until a homogeneous mixture is obtained using a mixer, blender or whisk.
Step 4:
Add kefir at room temperature to the egg mixture. Immediately add the soda and mix so that the alkali reacts with the acid. Pour three tablespoons of vegetable oil into a bowl, mix again.
Step 5:
Pour the sifted wheat flour into the mixture. It is necessary to sift flour, not only to remove various kinds of impurities, but also to saturate the product with oxygen and make products from it more lush and delicate in taste. Add flour in small portions, mixing the ingredients each time. You may take more or less flour than I do. Be guided by the consistency of the dough.
Step 6:
When the mass begins to gather into a thick dough, transfer it to a floured work surface and continue kneading with your hands. The dough should be dense, but not tight. It will stick slightly to your hands, there's nothing wrong with that.
Step 7:
On a floured work surface, roll out a layer of dough 0.5 cm thick. Cut out the circles with a cutting or a glass.
Step 8:
Pour vegetable oil into the pan so that it covers the crumpets by half. Heat it up strongly until it sizzles. Put the crumpet blanks in the oil. Fry them over medium heat for about 2-3 minutes on one side, then flip and fry them on the other side until browned. Focus on your stove.
Step 9:
Remove the crumpets from the pan and transfer to a plate covered with paper napkins so that excess oil is absorbed into the paper. Transfer the crumpets to a platter and serve to the table, sprinkling them with powdered sugar, sour cream or jam on top. They are very tasty and satisfying with condensed milk or jam. They do not harden for a long time and are delicious even cold. Bon appetit!

Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
