Pan-Fried Potato Zrazy with Mushrooms
A hearty, easy family dinner in 30 minutes! Pan-fried potato zrazy with mushrooms make a great family dish that's just as welcome on a holiday table. They're a meal in themselves — serve them with any sauce you like. They also go well with salads, pickles, and marinated vegetables.

Step 1:
How do you make pan-fried potato zrazy with mushrooms? Gather the ingredients. Peel the potatoes and rinse off any dirt. You can use any mushrooms. I'm using wild mushrooms boiled for 25–30 minutes; you could use button mushrooms instead — just rinse them well.

Step 2:
Cover the peeled potatoes with water, set them over heat, and bring to a boil. Add a little salt. Cook until tender — the potatoes should turn soft.

Drain the hot water from the cooked potatoes and mash them with a potato masher. Then let them cool.

Peel the onion and rinse it in cold water. Finely chop the mushrooms and onion. Pour a little vegetable oil into a hot skillet and fry the mushrooms with the onion for 5–7 minutes. Salt them lightly. Let the mushroom filling cool.

Add the egg and flour to the cooled potatoes. Mix.

With wet hands, form a small patty and press a hollow into it. Put a little mushroom filling in the center. Top with more potato and seal the edges.

Shape the potato zrazy and roll them in breadcrumbs.

Fry the zrazy in a hot skillet with a little vegetable oil. Cook them over low heat for 2–3 minutes per side.

While they fry, you can make a sauce to go with them. Stir together sour cream, dill, and a little garlic.

The finished potato zrazy will turn an appetizing golden color with a crisp crust. Serve them hot, with the garlic sauce alongside. Enjoy!
