    1. First, pick over the pearl barley well, since cheaper brands can have bits of debris in them. 2. Then be sure to rinse it in several changes of water until the water runs completely clear. Pearl barley doesn't need special soaking, so it keeps its nutrients. 3. It's best to cook it in a heavy-bottomed pot. Put the water on high heat and bring it to a boil. 4. Salt to taste. 5. I like to add turmeric for color, and it's good for you too. 6. Add the vegetable oil right away. 7. Add the rinsed pearl barley to the boiling water. Turn the heat down to the lowest setting and close the lid tightly. 8. Cook for 1 hour and 20 minutes — don't lift the lid and don't stir the porridge. 9. The pearl barley came out genuinely fluffy. All that's left is to serve it nicely. You can pair it with something sweet, and it goes wonderfully with spicy sauces and vegetables too.
