To start, prepare the meat by washing it well and drying it with a paper towel. From the back you need to cut off all the fat. Cut the meat into portions and put it in a deep container (not plastic).

Now we are preparing the marinade. Pour the wine into a bowl, add olive oil, squeeze out the juice from the lemon. Juniper berries and allspice are crushed in a mortar, put the mixture to the rest of the ingredients. Add salt, ground black pepper, whole lavrushka. Peel the onion, finely chop it, put it in a bowl as well.

Bring the marinade to a boil, but you do not need to boil - remove from the heat and pour the meat. We are waiting for it to cool down completely, after which we cover the container and remove the meat to marinate in the cold for a day.

Time has passed - remove the meat from the marinade, sprinkle with a little salt. It remains to string the meat on skewers and fry as usual. Fry until tender - a ruddy appetizing crust.
