Wrap the washed pumpkin in foil and put it in the oven. Keep until the pumpkin is soft.
Peel it off the crust, and beat the pulp in a blender. Put cottage cheese, powdered sugar and mix in a mixer (at low speed).
Chop the cookies into crumbs, pour in the melted butter, mix.
Put in a detachable mold (take a diameter of 26 cm) on top of parchment paper.
Pour the gelatin with milk and leave for half an hour.
Then heat it, but do not bring it to a boil. Cool to room temp.
Whisk cream.
Add gelatin to the pumpkin mixture, stirring. Put the cream, beat with a mixer at low speed.
Put the filling on a cookie base, level the surface and put it in the refrigerator overnight.
Decorate pumpkin cheesecake to your taste.
