Homemade Red Beet Kvass

An unusual but very tasty recipe. Give it a try! We usually think of "kvass" as a drink made from white or rye bread. But it turns out there are plenty of kvass recipes made from all kinds of foods. I decided to experiment a little and make some unusual kvass, and the one that intrigued me most was red kvass from raw beets. I can tell you it came out quite tasty. Here's how to make this drink.

Cooking method

    For this recipe you'll need beets, water, rye bread, and sugar.

    Cut the bread into medium-sized pieces.

    Trim the ends off the washed beets and cut them into medium-sized pieces.

    Put the sliced bread and beets into a washed and dried three-liter jar.

    Add the sugar to the jar.

    Pour in 2 liters of vigorously boiling water and cover with a towel (to keep out dust while letting air in). After about a day, bubbles will start to appear on the surface — the start of fermentation. If fermentation is slow to begin, drop in 3 unwashed raisins to speed it along.

    After 3 days the kvass is ready. Chill it in the fridge and enjoy as a drink — or use it as a base for borscht.
