In summer you usually don't want hot soup. Here many people immediately remember the culinary recipe of okroshka. It surprisingly combines elements of the first and second courses. There are many recipes for okroshka, this food is a favorite of many and many people. I want to share with you a recipe for delicious meat okroshka.
First boil the potatoes in salted water. Cool it, peel it from the skin and cut it into small cubes as if you were cooking olivier. Take fresh cucumbers and the whites of hard-boiled eggs and cut into cubes of the same size. Egg yolks should be ground with mustard, sour cream, sugar and salt, and then pour kvass. Stir the yolks well and let the mixture stand for a couple of minutes.
Since we have meat okroshka, the next step is to add boiled beef, cut into thin cubes. Add the meat to the cucumbers, proteins and potatoes and mix thoroughly.
When serving to the table, first put the prepared mixture on a plate, and then pour the seasoned kvass. If desired, you can sprinkle the finished food with dill or add sour cream.
