The amount of granulated sugar and sour cream is approximate, since everything will depend on the quality of the cottage cheese itself. If it is grainy and dry, then you will need to put more sour cream. If there is a small (or large) sourness, then it is necessary to increase the sugar norm accordingly.
Since the dish will not be subjected to heat treatment, it is worth paying close attention to the freshness of cottage cheese and sour cream. These products should be of impeccable quality and not just fresh, but the freshest, especially if the curd mass with raisins is intended for the youngest.
Put the cottage cheese you have in a clean, spacious container, add sour cream and granulated sugar, put vanilla sugar (and it will taste even better with natural vanilla), mix. Whisk the curd mass with an immersion blender until a fluffy creamy consistency is obtained. Taste it, if necessary, add more sour cream and / or granulated sugar until you get a satisfactory taste and consistency.
If the cottage cheese itself is tender and soft, and also if the consistency of the mixture of cottage cheese and sour cream suits you, then you can do without using a blender. It is enough in this case just to mash the cottage cheese with a fork.
Rinse the sweet raisins, pour boiling water over them and dry them slightly. Add to the finished curd mass. Mix it up.
Serve the cooked curd mass with raisins to the table in a chilled form.
You can supplement the taste range and increase the nutritional value of the curd mass with walnuts, slices of soft fruits, berries.
