  • The amounts of sugar and sour cream are approximate, since it all depends on the quality of the farmer's cheese itself. If it's grainy and dry, you'll need to add more sour cream. If it's slightly (or quite) tangy, increase the sugar accordingly. Since the dish won't be cooked, pay close attention to the freshness of the farmer's cheese and sour cream. These products should be of impeccable quality and not just fresh but the freshest, especially if the farmer's cheese spread is meant for little ones. Put your farmer's cheese in a clean, roomy bowl, add the sour cream and sugar, add vanilla sugar (and it tastes even better with real vanilla), and mix. Whip the cheese mixture with an immersion blender until it's fluffy and creamy. Taste it, and if needed, add more sour cream and/or sugar until the taste and consistency are right. If the farmer's cheese is tender and soft on its own, and the consistency of the cheese-and-sour-cream mixture suits you, you can skip the blender - in that case it's enough just to mash the cheese with a fork. Rinse the sweet raisins, pour boiling water over them, and pat them dry. Add them to the finished cheese spread. Mix. Serve the farmer's cheese spread with raisins chilled. You can round out the flavor and boost the nutrition with walnuts, pieces of soft fruit, or berries.
