  • The avocado for the spread must be ripe. You can't always buy a ripe one at the store - more often they sell green, hard ones. But that's easy to fix. Put unripe fruit in a paper bag and set it in a dark place. The room should be at room temperature. In a week to a week and a half, the avocados will ripen. If you put a banana in the paper bag with them, the process speeds up a bit. For this recipe you'll need one large avocado or two small ones. Wash the avocado, pat it gently dry with a paper towel, then cut it in half lengthwise. Remove the pit and scoop the flesh into a bowl with a teaspoon. Once the skin is completely scraped out and all the flesh is in the bowl, mash it. A fork is perfect for this - mash the flesh with it. Ripe avocado flesh mashes very easily and quickly - literally 10 seconds is enough. Add freshly squeezed lemon juice to the mash and pour in the olive oil. Mix everything well. Then sprinkle in sea salt to taste and freshly ground black pepper, and stir again until smooth. Taste it and, if needed, add a little more salt and pepper. The simple, quick spread is ready!
