Honey Mound Cake (Chak-Chak Style)

    1. Crack the eggs into a bowl and whisk. 2. Pour in the vodka. 3. Add the salt and sugar. 4. Sift in half the flour and mix. 5. Sift in the rest of the flour, add about two-thirds of it, and knead into a dough (add the remaining flour only if needed — depending on the flour, you may not use it all). 6. Knead until soft and pliable, shape into a ball, wrap in plastic, and let rest for half an hour. 7. Knead briefly again and divide in half. 8. Roll out the first half (not too thin, about 1/4 inch / 0.7 cm thick), cut it into strips 1 1/4–1 1/2 inches (3–4 cm) wide, then slice those crosswise into thin pieces. 9. Repeat with the second half. 10. Heat the oil in a skillet and fry the dough pieces in small batches until just golden (lightly golden is key). Drain the fried pieces on paper towels, then transfer them to a bowl. 11. Put the honey in a saucepan, add the sugar, and bring to a boil, stirring. 12. Pour the hot syrup over the fried dough pieces, toss to coat, and turn out onto a flat platter. 13. With dampened hands, shape it into a mound.
