Celery Root Salad with Apple

A tasty, very light salad of celery root and apple. Just two main ingredients, yet it makes a very tasty, light, and very healthy salad. Unlike celery stalks, the root has a more delicate taste and aroma, and the sweet-and-sour apple complements it beautifully.

    Gather all the ingredients you'll need for the celery root and apple salad.

    Wash the celery root, wipe it, and peel off the thick skin. Then cut it into very thin, short julienne strips. Of course, you can grate it on a coarse grater, which is faster. But I prefer to cut it thin, because that way the vegetable doesn't get crushed and stays juicy much longer.

    If you grated the celery root, you'll need to grate the apple too, so the salad has the same texture. We'll cut the apple into thin julienne strips like the root. But since apple darkens very quickly, prepare a bowl of cold water with one tablespoon of 6% vinegar added. Wash the apple, remove the seedy core, and cut it into thin strips. Put each batch of strips into the bowl of water, fully submerging them.

    Once the whole apple is cut, take it out of the water and quickly pat it dry with a paper towel. Add the apple strips to the cut celery root.

    Add the mayonnaise to the salad bowl and mix thoroughly. Let it stand for 5 minutes. It's easiest to do this in a wide bowl.

  • Celery root should be undamaged, firm, and free of any signs of rot. If it doesn't meet even one of these criteria, it's better to pass on that vegetable. The apple should also be fresh, and a sweet-and-sour one is best. To make the salad milder, add chopped boiled eggs, and for a little kick, some green onion. In general, you can add vegetables or meat to taste. You can dress the salad with mayonnaise like I do, but if you don't like it or can't have it, dress it with sour cream or plain yogurt. And for a vegan version, use a mix of vegetable oil, soy sauce, mustard, lemon juice, and sugar. It'll be delicious too.
