Sauerkraut Shchi with Beef (Russian Cabbage Soup)

A bowl of fragrant, hearty homemade shchi—and all's right with the world! Everyone loves sauerkraut shchi, and made on beef broth it's a true classic. You really have to make it for your family!

Cooking method

    Cover the bone-in beef with water and bring it to a boil—I'm using a 3-quart (3-liter) pot.

    Skim off the foam, then simmer over the lowest heat for 1 hour.

    Meanwhile, peel and wash the vegetables; finely chop the onion and grate the carrot.

    Peel, wash, and dice the potatoes.

    Add the potatoes to the broth and cook for 15 minutes, until tender.

    At the same time, sauté the onion and carrot in vegetable oil until golden.

    Add the sauerkraut, stir, and cook for 3–4 minutes.

    Add homemade tomato juice or 2 tablespoons of tomato paste.

    Simmer for 7–10 minutes.

    Add the sautéed vegetables to the pot.

    Season with salt.

    Add pepper and cook everything together for another 10 minutes.

    Pull the meat off the bone and return it to the pot.

    Add the bay leaves and turn off the heat after 1 minute. Let the shchi rest for 10–15 minutes.
