    1. How do you make smashed cucumber salad? Wash the cucumbers, cut them in half lengthwise, and remove the seeds. A teaspoon makes this very easy. 2. Now we "smash" the cucumbers — literally :) Turn the halves skin-side up and whack them with the flat side of a wide knife. You want the cucumbers to crack slightly. 3. Cut the cucumbers into small, irregular pieces, put them in a bowl, sprinkle with salt (about 1 teaspoon), pour over the vinegar, mix, and leave for 10 minutes. 4. Pit the olives and cut them into small pieces. 5. Slice the chili pepper into thin rings, finely chop the green onion, and chop the basil (you can leave the basil leaves whole), then squeeze the lemon juice into a glass. 6. Drain the cucumbers in a colander, then transfer them to a salad bowl. 7. Add the chili, onion, and olive pieces to the cucumbers. 8. Pour the lemon juice over everything (about 2 tablespoons — adjust to taste). 9. Mix the olive oil with the balsamic vinegar and dress the salad with the mixture. 10. Sprinkle the salad with ground black pepper and basil on top, and serve immediately. Enjoy!
