  • There are countless versions of solyanka, and every cook has their own little secrets. This rich soup is usually built on a strong meat, fish, or mushroom stock. In hot weather you can go lighter — chicken broth or even plain water. Because solyanka almost always carries two or three different meats, it stays hearty and flavorful even without a real stock. Heat a small amount of vegetable oil (half a tablespoon is plenty) in a heavy-bottomed pot. Add the bacon and onion, both cut into small dice. Stirring constantly, cook until the onion and bacon turn golden. Grate the carrot on the coarse holes of a box grater, or cut it into thin strips. Peel and cut the potatoes and smoked sausage into small pieces. Add the carrot and potato to the bacon, then the diced pickles — salt- or brine-cured both work. At this point you can toss in extra smoked meat, brisket, or smoked pork ribs if you like. Stir and let it cook a minute. Add the tomato paste, a pinch of sugar, and about 1/2 cup of broth or water. Stir and simmer over medium heat for about 5 minutes. You can use fresh tomatoes in place of the paste — then skip the added broth, since the tomatoes release their own juices, and if they're in-season and sweet, leave out the sugar entirely. Turn the heat to high, pour in the broth (or water), and once it boils, simmer covered over medium heat until the potatoes are tender. Finely chop or press the garlic and chop the herbs. Add the smoked sausage and garlic to the pot, then the olives and herbs. Bring back to a boil and immediately take it off the heat. Let it stand, covered, for a while. Taste for salt (the pickles, sausage, bacon, and olives usually bring enough); add more only if needed. To serve, drop a slice of lemon into each bowl and sprinkle with allspice. Delicious with a dollop of sour cream. Enjoy!
