Mackerel Rillettes
A tasty, out-of-the-ordinary dish made from familiar mackerel! Rillettes is a rustic, coarse-textured spread that comes from France, traditionally made with pork, rabbit, chicken, or fish. Here I'd like to offer you a mackerel version. It's very easy to make, and it comes out tender, fragrant, and moist. I hope you'll love it.

Cut off the fish's head and tail and clean out the belly. Cover the fish with cold water and add the onions (2 of them), carrots, bay leaf, wine, and salt; if you like, add thyme and a few allspice berries. Bring to a boil uncovered and cook 1–2 minutes (if the fish is large; if it's small, turn it off right away). Turn off the heat, cover, and let it steep for 15 minutes.

Lift the fish out of the broth, let it cool a little, and remove the skin and bones.

Mash the fish with a fork (a fork, not a blender).

Step 5:
Add the finely chopped onion (1), the mustard, and the sour cream. Mix well.

If the mixture is too thick, stir in a few tablespoons of the fish broth.

Serve on toast or in pastry cups. Enjoy!
