We cut off the head and tail of the fish, clean the abdomen. Fill the fish with cold water, add onion (2 pcs.), carrot, bay leaf, wine, salt, if desired, add thyme, allspice. Bring to a boil without a lid, cook for 1-2 minutes (if the fish is large, if the fish is small, turn it off immediately), turn it off, cover with a lid and let it brew for 15 minutes.
Step 3:
We take the fish out of the broth, let it cool down a little and peel off the skin and bones.
Step 4:
Knead the fish with a fork (with a fork, not a blender).

Add finely chopped onion (1 pc.), mustard and sour cream. Mix thoroughly.

If the mixture is too thick, then add a few tablespoons of fish broth.
