Lobio with Beef

Georgian cooking is some of the most delicious in the world — give it a try! Lobio with meat is a traditional Georgian dish built around beans — in fact, "lobio" is simply the Georgian word for "beans." There are countless ways to make it; what stays constant is the rich, beany flavor and a handful of fresh herbs. Adding meat to this version makes it even heartier and more appetizing.

    1. Rinse the red beans well. Cover them with clean cold water and soak for about 4–5 hours, or overnight — this cuts the cooking time considerably. Then put them in a pot and cook until fully tender, about an hour. 2. While the beans cook, work on the meat. Rinse the beef under running water and pat it dry with paper towels. On a cutting board, cut it into medium, roughly square pieces with a sharp knife. 3. Put the beef pieces in a deep skillet and set it over the heat. Once the meat warms up, add a little water, cover, and braise over low heat for half an hour, stirring now and then and re-covering. 4. Peel the onion, rinse it, and dice it small. Add it to the beef and keep braising. 5. Rinse the tomato, pour boiling water over it, score an X at the base with a sharp knife, and slip off the skin. Dice the blanched tomato small, add it to the skillet, and braise with the meat. 6. Peel and separate the garlic into cloves and rinse them. Crush each clove with the flat of the knife to release its juices, then finely chop and add to the skillet. Braise the beef another 10–15 minutes. 7. Once the beans are done, drain off the remaining water and add the cooked red beans to the skillet with the braised beef. Salt and season with ground black pepper to taste. Braise about 5 more minutes, then take it off the heat. Let the meat, beans, and vegetables rest, covered, for about 20 minutes so the flavors come together. 8. Rinse, dry, and finely chop the herbs (cilantro, parsley, or dill all work). Transfer the lobio to a nice serving dish and garnish with the chopped herbs. Serve with a sauce. Enjoy!
