Guyru Lagman (Hand-Pulled Noodles with Beef and Vegetables)

This Central Asian dish will wow you with its flavor! Guyru lagman is homemade noodles topped with a sauce of braised vegetables and meat — tasty, hearty, and a little out of the ordinary. When you boil the noodles, add a splash of oil and some salt to the water. It takes a while to make, but it's worth it!

    1. Make the noodles:
    • Sift the flour into a bowl, crack in the egg, add salt, and pour in the water. Knead a firm, elastic dough and let it rest under plastic wrap for half an hour.
    • Turn the dough out onto a work surface brushed with sunflower oil, shape it into a flat round, then cut it into long bars and roll each bar into a thin rope.
    • Arrange the ropes on a flat plate, coiling them like a snail, brush the top with sunflower oil, and let them sit 15 minutes; then stretch each rope out into noodles.
    • Cook the noodles in small batches for 5 minutes from the time the water boils, then drain in a colander.
    1. Now for the sauce:
    • Rinse the beef, cut it into small pieces, and brown it in a cauldron (or Dutch oven) in sunflower oil until golden.
    • Peel the onion and carrot, dice them, add them to the meat, and season with salt.
    • Rinse the eggplant, cut it to match the carrots, and add it to the rest.
    • Rinse the tomato and seed the bell pepper, dice both, and add them after the eggplant.
    • Peel the garlic and press it, add it to the cauldron, pour in the broth from the noodles, salt to taste, and braise until the vegetables are fully tender.
  • Serve the noodles topped with the sauce.
