Honeysuckle Berry Jam
Tender, juicy, and delicious — it'll warm you right up on a cold winter day! I usually use up nearly all my honeyberries making this jam, which is a big favorite in our family.
Cooking method
-
Step 1:
Gather your ingredients.
-
Step 2:
Toss the rinsed berries with the pectin sugar.
-
Step 3:
Along with it, add a couple of tablespoons of plain granulated sugar, too. Stir everything together, coating the berries in the sugar.
-
Step 4:
Let it stand for a while, until the berries release their juices.
-
Step 5:
Set the pan on the stove and cook the berries in their own juice.
-
Step 6:
Once the liquid comes to a boil, stir in all the remaining sugar until it dissolves.
-
Step 7:
Bring the mixture back to a boil.
-
Step 8:
Then keep it on the heat for a final 3 minutes, stirring briskly with a spatula or spoon and skimming off the foam.
-
Step 9:
Pour the hot jam into sterilized jars. Seal and let them cool. This honeyberry jam comes out wonderful — you'll see for yourself. Just let it cool fully and store it properly.
