Radish Salad with Beef

Pull the beef apart into shreds and add the garlic.

Grate the radish on the medium side of a grater.

- Pull the boiled beef apart into shreds. Press the garlic over it, then pour in plenty of sour cream. Mix everything well and let it sit in the refrigerator for at least half an hour — better yet, do this ahead of time so the meat really soaks up the garlic-sour cream sauce. Hard-boil the eggs and separate the whites from the yolks. Chop the whites coarsely. And the yolks? You won't need them in this salad at all. Grate the radish and pickles on the medium side of a grater. Finely chop the green onion and herbs. Now mix it all together. Gradually fold in the dressed beef, stirring gently. Season with salt and pepper to taste. The salad doesn't need any extra dressing — the sour cream from the meat should be plenty, and the radish and pickles will give off their own juices. Not enough sauce for you? Then add a little more sour cream!
