Step 1:
Wash lettuce leaves under running water, carefully looking at all the folds: pests are often found in them. Shake off excess moisture and tear the salad with your hands. I do not use the hard white part in the middle of the salad leaf, the salad will turn out more tender. Transfer the lettuce leaves to a salad bowl.
Step 2:
Wash cucumbers under running water. If you have young summer cucumbers, then you don't have to peel them off. Cut the cucumbers into thin half-rings.
Step 3:
Wash the green onions and parsley under running water and shake. Finely chop the greens. Instead of onions and parsley, you can use any other greens: for example, coriander or dill are well suited here. Fresh herbs will give this light salad new notes of taste and unsurpassed aroma.
Step 4:
Drain the liquid from the jar of olives, it will not be needed. Cut the olives into rings. It is better to choose olives immediately without a stone, since it will be more convenient to work with them. Olives with various fillers inside are also available for sale: with anchovies, lemon or sweet red pepper. If you do not choose the classic version of olives, then, in my opinion, the version with lemon filling is best suited here.
Step 5:
For dressing, mix olive oil, garlic grated on a fine grater and quite a bit of lemon or lime juice. What to choose: lime or lemon - it's up to you. Lime is more fragrant, and lemon is more familiar to us. Season the salad with the resulting dressing, season with salt and pepper to taste. This salad is served immediately.
Such a fresh and low-calorie salad, and even with a sour-brown dressing, is ideal for those who watch their figure. Even its impressive volumes will not be able to harm your waistline!
Add the dressing to the salad little by little, stirring occasionally and tasting it so as not to overdo it. Still, the dressing turns out to be sour and quite spicy.
