Lithuanian Cepelinai (Potato Dumplings)

A fun, hearty, delicious dish from Lithuania! Cepelinai are potato dumplings with a filling — either farmer's cheese or ground meat — and they turn out wonderful either way. Potato dough doesn't hold together well, so don't expect it to be springy or stretchy, but with damp hands it's easy enough to shape into patties.

    1. Peel the onion and cut it in half. Finely chop one half with a knife and add it to the ground meat; purée the other half in a blender to a pulp.
    1. Heat the vegetable oil in a skillet, add the ground meat with the chopped onion, season with salt and pepper, and brown for 5–6 minutes.
    1. Peel and rinse the raw potatoes, grate them, and place them in a sieve along with the blended onion pulp. Set the sieve over a pot or bowl to catch the excess juice.
    1. Peel the potato that was boiled in its skin, grate it too, combine it with the raw potato-and-onion mixture, season with salt, and stir.
    1. Divide the potato mixture into small portions and, with damp hands, shape each into a ball.
    1. Dust your work surface with starch. Press each potato ball into a patty, place a little of the meat filling on it, and carefully fold the dough around it.
    1. Fill a pot with water, salt it, and bring to a boil. Gently lower in the dumplings and boil for 7 minutes, then lift them out onto a platter with a slotted spoon.
    1. Cut the fatback into small cubes; peel the onion and cut it into cubes about the same size.
    1. Fry the fatback and onion in a skillet until golden, then stir in the sour cream and simmer for 2–3 minutes. Add salt.
  • Serve the cepelinai with the sauce. Enjoy!
